These seeds are very similar in size to a sesame seed, they are black in colour and have a very fragrant strong aroma. The name Nigella derives from the Latin Nigellus, or niger, meaning black. Nigella seeds are small (1½ - 3mm), matte-black grains with a rough surface and an oily white interior, slightly bitter and peppery with a crunchy texture. It is widely used in Indian cuisines as a part of the spice mixture "paanch phoran" or "panch phoron" (meaning a mixture of five spices) and by itself used mainly in bread recipes and savoury dishes and most recognizably in Naan Bread
